In November 2003, Aoki made his MMA debut for DEEP, winning a one-night tournament by armbar submissions. He demonstrated additional unconventional grappling techniques against veteran Seichi Ikemoto and Keith Wisniewski, whom he defeated by fracturing his arm with a standing wakigatame, also called a Fujiwara armbar.

He would also fight the legendary Hayato Sakurai in a Shooto match, losing a controversial decision. Aoki competed in both organizations until 2007, defeating Akira Kikuchi to win the Shooto Welterweight Championship.

Aoki made his PRIDE Fighting Championships debut at Pride Bushido 12 in August 2006, submitting American fighter Jason Black with a triangle choke in under two minutes. Following this win, Aoki was scheduled to face rising Lightweight sensation Gilbert Melendez at Bushido 13 the following month. Before the fight, Melendez suffered an elbow injury (a ruptured bursa sac) during training and was forced to withdraw. The opponent of Aoki has been changed to Clay French. Aoki submitted French with a triangle hold in just under four minutes.

Aoki began dabbling in pro wrestling for Antonio Inoki’s Inoki Genome Federation (IGF) in 2014, competing in a series of mixed martial arts (MMA) bouts on his programs before transitioning to pro wrestling. Aoki was announced as a member of Next Exciting Wrestling, a new IGF banner, in 2017. Aoki competed in the initial competition and defeated Keisuke Okuda.[88] Aoki competed for NEW until IGF’s cancellation announcement in July 2017. Aoki lost his final match for NEW against Tatsuhito Takaiwa.

Aoki announced that he would return to professional wrestling in 2018 and fight for DDT Pro Wrestling. At Maji Manji #15, Aoki debuted his ring, easily defeating Gota Ihashi. Aoki defeated Harashima on October 28 at Maji Manji #2 to win the DDT Extreme Championship. The title was reclaimed by Harashima on February 19, 2019, at the Judgement.

Aoki is considered an unusual fighter due to his intense focus on grappling at the expense of other MMA disciplines. Consequently, most of his stand-up game revolves around taking his opponent to the ground, utilizing chain combinations of wrestling and judo techniques from the clinch to achieve his goal and the more spectacular guard lifting.

Once on the mat, Aoki is an electric grappler, gaining strength from his knowledge of numerous disciplines, such as Shooto’s style of shoot grappling, judo, and Eddie Bravo’s 10th Planet Jiu-Jitsu system. He is known for his inventive approach to submissions, excelling not only in armlocks and leglocks but also neck cranks and more exotic joint locks. He is an active guard specialist, preferring the rubber guard due to his flexibility.

Aoki was supposed to participate against Gordon Ryan at a ONE Championship event in August 2021, but the bout was canceled due to Ryan’s stomach issue at the time. Instead, he was scheduled to compete against Kade Ruotolo at ONE 157 on May 20, 2021. Aoki was defeated by decision. On October 6, 2023, Aoki competed in an openweight grappling contest against Mikey Musumeci at ONE Fight Night 15. He was defeated through submission.
