Jedrzejczyk made her professional mixed martial arts (MMA) debut against Sylwia Juskiewicz at SFT – MMA Fight Night Diva SPA on May 19, 2012, and won unanimously. At MFC 5 on December 8, 2012, she defeated Lily Kazak with a rear naked choke. At Battle of Moscow 12 on June 20, 2013, she defeated the then-leading Russian WMMA flyweight fighter Julia Berezikova via unanimous decision.
Fight Matrix ranked Jdrzejczyk as the seventh-best female flyweight fighter in the world in July 2013. At Cage Warriors Fighting Championship 69 on June 7, 2014, she knocked out Rosi Sexton in the second round.

In July 2014, Jdrzejczyk signed an official contract with the Ultimate Fighting Championship (UFC). She made her promotional debut on July 26, 2014, at UFC on Fox: Lawler vs. Brown against Juliana Lima as a strawweight. She was declared the winner by a unanimous decision.
Jdrzejczyk faced undefeated strawweight contender Cláudia Gadelha at UFC on Fox 13 on December 13, 2014. A split decision decided the bout. Most MMA media scored the fight in Gadelha’s favor, which caused much controversy regarding the judges’ decision.
In early 2016, the UFC announced that Jdrzejczyk would be one of the coaches on The Ultimate Fighter 23, opposite her former opponent Cláudia Gadelha. On September 20, 2018, it was announced that Jdrzejczyk would return to flyweight to face Valentina Shevchenko for the vacant UFC Women’s Flyweight Championship on December 8, 2018, at UFC 231. Due to the need for a main event at UFC 230, Shevchenko fought Sijara Eubanks. After announcing Cormier vs. Lewis on October 9, 2018, the UFC confirmed the bout between Shevchenko and Eubanks had been canceled and that Jdrzejczyk would defend her title against Shevchenko at UFC 231. A unanimous decision in the fight defeated Jdrzejczyk.
Jdrzejczyk fought Zhang Weili for the UFC Women’s Strawweight Championship at UFC 248 on March 7, 2020. A split decision decided the bout. This fight earned her the Fight of the Night award and was considered by many experts to be the best fight in the history of women’s mixed martial arts.
The rematch between Jdrzejczyk and Zhang occurred at UFC 275 on June 11, 2022. Jdrzejczyk lost the fight after a flying back fist hit him in the second round.
